Botanical Description
Caraway (Carum carvi) is a biennial herbaceous plant belonging to the Apiaceae family. It grows up to about 60 cm in height. The leaves are pinnate-compound with thread-like leaflets, arranged alternately on the stem and branches, and are light green in color. The flowers are small, white, or white-purple, arranged in compound umbels. The fruits are oblong-ovate, yellowish-gray or dark gray, resembling cumin seeds but with a crescent shape and dark brown color, featuring five vertical ridges.

Egyptian Variety: Contains essential oil content ranging between 3.2% and 3.8%.
Moroccan Variety: Considered the highest in essential oil content, ranging between 3.5% and 4.6%.
Iranian Variety: Essential oil content ranges between 2.1% and 2.6%.
